Organic pasta made from a single ingredient
The organic pasta range at Explore Cuisine is made from pulses, and mostly from just one type: edamame, black soya beans, chickpeas, green lentils or mung beans. No flour, no fillers, no gum. Boil some water, pop them in and check the back of the packet — there’s just one line of text there.
Why legumes?
Pasta made from pulses is naturally gluten-free without needing to be specially processed to remove gluten. It is also more filling than ordinary wheat pasta: a portion fills you up, and your evening meal won’t end with you feeling peckish an hour later. Being vegan and GMO-free is more of a natural consequence here than a specific promise.
How to cook it so that it tastes good
Organic pasta made from pulses cooks faster than wheat pasta and is easy to overcook. Spaghetti is ready in about three to five minutes, whilst lentil and pea penne take seven to nine minutes. Cook in boiling water until al dente, drain and rinse quickly — this ensures the texture remains just right and prevents it from becoming sticky.
What to serve it with
Edamame and black soya beans are dark in colour and have a strong flavour: they go well with a simple dressing — good-quality olive oil, garlic and lemon. Chickpea and lentil varieties are more neutral in flavour and go well with tomato sauce or pesto. Top with freeze-dried basil or seasoned salt straight from the mill.
